Holiday Ale

Strong Belgian Ale - Belgian Strong Dark Ale

A strong, malty, Belgian style ale, enhanced with the flavours of the holiday season.

Ingredients
Method

Put crushed grains in nylon straining bags and tie closed. Steep in 1½ gallons of 155°F water for 30 minutes. Remove the bag and allow to drain. Add Dry Malt Extract and bring water to a boil. When water boils, add the Bittering hops. Boil for 45 minutes and add the Flavour hops, together with the Irish Moss. Boil for 10 minutes and add the Aroma hops. Boil for the final 5 minutes.

Chop the ginger and add with the other spices to a cup of vodka in a sealed jar. Allow to steep for a week. Strain and add to keg/bottling bucket.
